Sara’s Birthday Soup

Your friend Sara throws a Great Hall style potluck dinner for her birthday dinner, and you think “Hell yea! Another great opportunity to feed people!”

So you have all these grand plans for it but you forget to factor in the weeks of travelling and getting married that you’re doing before the birthday dinner. And now it’s the day before the dinner and you’re tired as fuck but you don’t want to let anyone (mostly yourself) down. So you think, “What’s quick and easy and great for a big dinner during winter?” SOUP.

Warm delicious soup.

I threw this soup together the day of the dinner. I had no that it would have a long-lasting impact on friends, and they’ll ask me for a recipe someday. I want to bring it back from memory and recreate it. The only ingredient I remember is butternut squash. So here’s my second take at Butternut Squash Soup.

INGREDIENTS

  • Butternut Squash – diced
  • Onions – roughly chopped
  • Garlic and ginger – minced or finely chopped
  • Sweet potato – diced
  • Garam masala –
  • Turmeric
  • Cayenne
  • Coconut milk
  • Stock (unsalted)

INSTRUCTIONS

Step 1: Heat oil in a large pot, add all the vegetable (onions, squash, sweet potato, garlic, and ginger to it. Season with salt and pepper, and saute until fragrant.

Step 2: Add all the spices- garam masala, turmeric, cayenne. Stir to mix well and cook for another 5 mins.

Step 3: Add the stock and the coconut milk. Turn heat to low, cover the pot, and let it simmer for 10-15 mins.
